Ingredients
Ingredients for 4 serving:
- 600 g red mullet fillets
- 400 g fresh broad beans
- 300 g potatoes
- 100 g sheep cheese
- 180 g olive oil
- salt
- pepper
- mint leaves
- red peppercorns
- lemon juice
Preparation
Season the red mullet fillets with crushed red pepper and salt and drizzle with lemon juice.
Let marinate briefly, and then fry the fillets in shallow oil until they turn golden.
Cook and mash the broad beans and potatoes and season with salt, pepper, olive oil, and grated sheep cheese.
Form the mash into dumplings and place red mullet fillets diagonally on top of them.
Garnish with mint leaves, orange fond, and crispy pasta (homemade oil-fried pasta).
Advice
In addition to the red mullet, you can also prepare smaller fillets of other fish.
