Ingredients
For six:
- 12 young mackerels
- 0.5 kg onions
- 6 cloves garlic
- 1 bunch parsley
- 1 sprig rosemary
- 1 laurel leaf
- 0.1 l locally-made oil
- 0.2 l oil
- 0.2 l homemade vinegar
- lemon juice, to taste
- pepper and salt, to taste
- water or broth, to taste
Preparation
Clean and wash the fish and drain well, then flour lightly and fry on all sides in a bit of oil.
Place the fried fish in a shallow bowl. Sauté sliced onions in the remaining oil, add chopped garlic, parsley, rosemary, laurel leaf, vinegar as needed, broth or water as needed, season, and cook until well done.
Pour the hot sauce over the fish.
Chill the marinade and preferably serve the next day.
