Octopus with Potatoes



Ingredients

Ingredients for 4 serving:

  • 2 kg octopus (one larger octopus or two smaller ones)
  • 500 g potatoes
  • 100 ml high-quality olive oil
  • 2 cloves garlic
  • a sprig of fresh rosemary
  • finely chopped parsley
  • salt
  • freshly ground pepper

Preparation

For best results, clean the octopus and keep it in the freezer for a few days. This will make the octopus tender during preparation.

Thaw the octopus and cook for 40-60 minutes, until softened.

Wash the potatoes in skins and cook in lightly salted water. Once cooled, peel and dice the potatoes.

Remove the octopus from the cooking water and set the water aside. If you want, you can further clean the octopus by removing the reddish skin after cooking.

Cut the octopus into rings. Finely chop the garlic and mix it with the potatoes and octopus.

Season with olive oil. You can also add some of the liquid that the octopus was cooked in to make it juicier. Season with salt, pepper, rosemary, and parsley.
