Black Cake - Beleca



Ingredients

For the cake:

  • 140 g butter
  • 120 g powdered sugar
  • 75 g dark chocolate
  • 5 eggs
  • 100 g pastry flour
  • 6 g baking powder
  • 30 g unsweetened cocoa powder

For the chocolate cream filling:

  • 65 g butter
  • 50 g powdered sugar
  • 250 g dark chocolate
  • 10 g gelatin
  • 500 ml whipped cream
  • 100 g egg yolks

For the orange cream filling:

  • 3 egg yolks
  • 150 g sugar
  • vanilla sugar
  • 165 g milk
  • 300 g mascarpone
  • 350 ml whipped cream
  • 10 g gelatin
  • 2 tbsp orange puree

Preparation

For the cake: Soften the butter, add sugar and egg yolks, whisking everything together, and then add melted chocolate. Sift the flour, baking powder, and cocoa powder. Beat the egg whites until stiff. Gradually add the egg whites into the batter. Bake at 150°C for 40 minutes.

For the chocolate cream filling: Combine the butter and powdered sugar, combine the egg yolks with melted chocolate, then add one part of the whipped cream and the gelatin, and finally fold in the rest of the whipped cream.

For the orange cream filling: Whisk the egg yolks with sugar and vanilla sugar and cook with milk over low heat. When the mixture cools, add in the mascarpone, gelatin, orange puree, and finally, whipped cream.

To combine: Put the chocolate cake into the bottom of a cake tin, cover with the chocolate cream filling and let settle, then top with the orange cream filling, and finally decorate the cake.

Serving

Decorate as desired and serve chilled.
