Marinated Shrimp Crudo



Ingredients

  • 400 g shrimp
  • 1 lime
  • 100 ml olive oil
  • tabasco sauce
  • 30 g fleur de sel
  • 3 g Malagueta or Belém pepper
  • 1 Granny Smith apple

Preparation

Marinate the raw shrimp tails in lime juice, olive oil, and tabasco sauce (the sauce is optional; for a milder marinade with a stronger shrimp flavor, leave out the tabasco sauce; for a stronger-tasting, slightly acidic and spicy marinade, add some tabasco sauce; make sure not to go overboard as this will overpower the subtle taste of the shrimp). Lightly salt the shrimp with fleur de sel and add pepper (optional). Grate lemon zest from a thoroughly washed lemon over the marinade and add a julienned** apple.
