Ingredients
Dough:
- 250 g flour
- 50 g sugar
- 50 g fat
- 1 egg
- a pinch of salt
- a splash of milk, as needed
Filling:
- 1 kg young sheep cheese
- 250 g sugar
- 100 g flour
- 6 egg yolks
- zest of 1 lemon
- vanilla sugar (as needed)
Preparation
Combine the flour, sugar, fat, egg, and a pinch of salt into a macaroni-type dough, and shape it into a loaf. Let the dough rest for a while.
Roll the dough to get a round shape the size of a shallow plate. The ingredients are enough to make three cakes of this size. Place the dough in a cake pan so that it covers all sides of the pan (as if making a crostata).
Grind the cheese (this is easiest done using a nut grinder), add the sugar, egg yolk, and other ingredients, and mix to combine. Pour the mixture over the dough and level off, gently pressing the edges with your fingers so that the filling doesn't run off.
Preheat the oven to 180°C and bake for about 25 minutes, until the cake turns golden.
